Hearty Turkey Carbonara

Hearty Turkey Carbonara
A wonderful recipe, easy to do.

  • 350g Pasta
  • 100g Bacon, cut into Strips
  • 1 onion peeled and chopped
  • 3 cloves of garlic
  • 425g turkey (fresh cut into strips)
  • 100g button mushrooms, halved

Carbonara Sauce

  • 1 egg per person
  • Black pepper
  • Salt
  • Parmesan cheese

Cooke pasta on lightly salted boiling water for 5-8 mins according to packet directions.
Whilst this is cooking sauté the bacon, onion and garlic in a saucepan.
On a frying pan, put a little oil and add turkey strips and cook.
Once turkey is cooked add this to the saucepan. Then add your mushrooms.
In a bowl, put the one egg per person, season with black pepper, add some salt and plenty of Parmesan and mix. This must be mixed very well together.
Drain your pasta and add this mixture to it mi through so that it cooks the egg and melts the Parmesan. This must be done on a very low heat otherwise your egg will be scrambled!!

Then add your turkey and bacon mixture to the pasta and serve.
