Heat 1 tbsp of vegetable oil in a wok / large frying pan and add the turkey.
Fry until almost cooked then splash in the soy sauce.
Cook for another min or 2 and then put to the side on a plate.
Wipe the wok clean and heat another tbsp of vegetable oil.
Add the garlic, carrots, red pepper and sweet corn and stirfry.
Return the turkey to the pan and heat through, adding in the spring onion.
Serve with Noodles.
