Spicy Turkey Rice
Liven up your turkey leftovers!

  • 200g of long grain rice
  • 1 tbsp of  olive oil
  • 100g (approx. or whatever you prefer) of chorizo
  • 250g ( approx.) of cooked turkey, shredded
  • 150g of frozen peas
  • 50 ml dry white wine
  • 4 scallions thinly sliced
  • 2 plum tomatoes chopped
  • Salt & black pepper to season

  • Cook rice according to packaging guidelines
  • Meanwhile, heat the oil on a large pan over medium to high heat, Add the chorizo and cook,
    stirring occasionally until browned ( approx. 2-3 mins)
  • Add the turkey, peas and wine to the pan and simmer until heated through ( approx. 2 mins)
  • Stir in the scallions, tomatoes, and season a s desired with salt & pepper
  • Add the rice and toss to combine
